Talking with some friends (guild and not guild members) we have some suggestions for characters that could be included in the game, those are:

Okay, I've made a bunch of lists and I won't worry about the categorization too much. This would get much to complicated if I gave you every set of lists I had so I'm just going to compile them together into one set categorized into light and dark side, then you can let me know what you think. I've got a variety of different suggestions here thanks to my recent activity ranging from popular choices to some extremely obscure names only the nerdiest of Star Wars fans will recognize, as well as a mix of legends and canon.

You do have some good ideas on this list. I'm not familiar with all of them but I can comment on some of the ones I do know.
There are definitely a lot of Jedi who could still be added to the game. You listed Ki-Adi-Mundi and Shaak Ti, both of which would be good choices. There are probably a few others from the prequel trilogies alone who could also join in. Then if you wanted to go old school you could also add some Old Republic characters like Juhani and Jolee.
Jango Fett is one I've heard a lot of interest in. The only issue I could see with including him is that they'd need to make sure he doesn't just come off as Boba Fett in blue armor. It would probably be a good idea to find some special abilities or something to make him more easily distinctive.He did tend to favor two small plasters over Boba Fett's rifle. Perhaps he could have some kind of quick-draw strike?
