Dooku or sid

I can reliably farm both so I may just do that, but depending on the new char for cantina battles I may stop farming dooku. I've got him almost 5* and sid halfway to 6. Plasma, Lumi, ST Han are all 7*, qgj is 5 but I'm looking to replace my 4*daka. I'm thinking dooku would be better in my squad with phasma lead but I could have sid lead and swap phasma for dooku. Thoughts on who's better(sid or dooku) for defense @ 7*? That's my main concern as I hover around rank 100 and am hoping one or both of them would get me over that hump. I've almost unlocked rey but getting her to 5* would be almost as painful as unlocking her, fotp is 4* with 24/65, I prefer to use him but he's too squish still. Thanks!

If u gotta pick between dooku and sid (i dont understand why you have to choose between them lol)
Sid > then dooku
