Are Jango and Boba Mandalorian? I thought they just wore Mandalorian armor because of this clip from the clone wars

Jango is rumoured to be from Concord Dawn, a planet destroyed in a Mandalorian war. So he and Boba do not deserve a Mandalorian tag.

Well as far characters already in it would just be assigning the new tag. A second cyborg model of Maul would be cool though. Mandalorian, Deathwatch, Domino Squad, and Zann Consortium would be affiliations that some existing characters could just have added to them.

"Jedi Luke" I think should be RotJ Luke not to be confused with Luke from TLJ Luke or veteran Luke.

Characters from the old republic online would be cool but I'd hope they'd fill their original roles from vanilla. You could also consider HK 55
