Just recently a cap was put on energy so people can't rush their way to level 80 when the new cap is released. I think the energy cap is 1000 or something.

I think the upper limit for regular energy is 4000. So assuming you refill 5x per day at 50-50-100-100-100, that's 600 energy a day ( not counting the initial energy you will have from running the clock.)
Also count the three 45 energy refills, and that's another 135 energy.
Which means you could store roughly 735 energy per day. So it would take a little less than five and a half days to hit the cap.
Not sure about the cap for cantina.
I wouldn't start stowing now if that's what you plan to do. You'll only be hurting yourself

i'm not trying to level up faster, although that would be a bonus for me. im trying to get gear for certain characters asap when the new update comes out. should i continue gearing speedy characters right now, or save up energy for later on in case the meta shifts. I would be able to fully gear a certain character right away. sorry if I worded my question in a wrong way
Aha. I would gear the characters you have now until we get the patch notes, which usually come out 4-5 days ahead of the actual patch. If there is a massive change and you need different characters, then you will still have time to max out your energy.

I keep working on my main characters. I won't be able to take advantage of lvl 80 without having already maxed my guys. Never really cared much about the META, farming my favorite characters no matter what. I can't imagine that EA would super nerf the Jedi or Sith classes anyway.
It doesn't really make any sense to me to bank energy. When your energy is full you no longer get the free stuff every 5 minutes. You get 12 free energy per hour for LS and DS, and 6 for cantina. I try to make sure my energy is never at max. Even when I don't have time to play, I make sure I sim a couple of battles for things I need. That way I am always replenishing free energy. I am playing the game with the goal of maxing as many chars as I can. When you are banking energy you are losing 238 regular energy and 119 cantina energy everyday.
