There are many, many heroes in the game who could be pilots, and who have datamined ships that are tied to them. E.G. Asajj and her Starfighter.

Nobody can fly the Kessel Run as fast as he can. The fact that I already have him at 7*, fully geared has nothing to do with it.

Luke can only fly in straight lines. Hans best manoeuvre is to list lazily to the left.

Never seen another pilot trash 10+ ties while low level flying and blasting a crap load of stormtroopers to boot in under 30 seconds, it has to be Poe.
