Im not sure about Chuwy at hightlvl.
For now i got Sid,JC,Chuwy and tomorrow im going to add Luke and Lumi.
So who is the best tank for now?and for later?
I have 5* Chewie level 55, and to be honest he's not great; he's just a bullet sponge, with fairly decent health, but bad damage and only taunts for one turn. He's also usually dead at the end of his taunt haha. I hate coming up against fives for his speed down and bonus attacks, I haven't used him though, but I think he would definitely be a good option. I'm working towards getting him myself
Fives is great especially when paired with Phasma (leader)...only problem with him as your tank is that he does not taunt like Poe and Chew, but he has great health and the highest armour in the game. His default attack causes slow so often, and can call a big hitter in his assist ability with 2 attacks in one (possibly more with phasma as leader), as well as a very high counter chance. A great all round character that I use way more than Chew. If you have JC and Lumi in your team hopefully the lack of taunt should not matter too much.

Depends what you need a tank for. Fives and Han and Poe are worlds apart and are used for different purposes.
But it will be better a tank like Poe and Han or go for the style of Fives?
The great thing about these types of games is that most characters are viable and have their uses. In this case with what tank is better, in some scenarios having a toon that can taunt would be very useful and could save your sid etc from being targeted and killed...however the much lower DPS from Chew means that not having a taunter is fine for me, Fives offers so much more overall and can help kill the enemy quicker meaning the tanking is not needed as much.
5555 is beast except for taunt
So poe is best tank now
because he has good speed.
In Swgoh, which tank is best?
That's not important.
They has values in each situations.
Poe - expose, fast taunt before enermy can attack
Han - fast circling turn meters and taunt
Chew - taunt and hp buff and healing
5555 - good stats and counter attack
Guard - auto taunt
And so on
Do you need tanks as in the "tank" class
Or just characters win a lot of health
Or a tank with a taunt

Highest health I think is fives+armour

Phasma is incredible and is by far the best tanky character
Savage also does a lot of damage for a "tanky" charcter
