It's well known and old news. When G$ first came out, the same conversation was had in relation to DN's annihilate. Instant kill doesn't drop their health. It just kills them.
instant kill abilities differ from abilities that just do damage, Gas kit prevents damage below 100% but not instant kill abilities since instant kill abilities don’t bring you below 100%, they just kill instantly without taking HP away.
Kit says he can’t drop below 100% health, doesn’t say he can’t be defeated.
While I agree it could be clearer, there’s also a limit to how thoroughly a kit can be written since not all aspects can be fitted in there.
As others pointed out, this has always worked the same way, CAT, Mando, DN can all do this trick.
The real questions is: What were you thinking taking GAS against a JMK w/CAT squad?

Also, non-ult, non-CAT JMK is easy to beat with GAS, so if OP was unaware of the instakill mechanic, it would be an easy mistake to go against a non-ult JMK with CAT and get an unpleaseant surprise....
Just for your info, the same goes for other abilities that make you immune to damage, or abilities like Rey’s ult. While you can’t deal damage to them, you can still «instantly defeat» them using SEE, Nihilus, Mando, or CAT.
Then they should add a one sentence explanation in ability description. That doesn't seem like too much to ask.

No where does it say he can’t be defeated when 501st allies are active. It simply says he can’t drop below 100% health, which would mean instant kill abilities bypass that rule
Consider Insta-kill as a status effect you have to specifically be immune to.
Which actually is how the Death effect works in most RPGs, it's treated as basically a status effect, not anything resembling damage.
While he can't drop below 100% hp, he can still be slowed, ability blocked, w/e he isn't immune to (don't remember his immunities off the top of my head), which would thus include the "status effect" of "Instant Death".
Same reason you can be "Instantly Defeated" under damage immunity - Because you can still be inflicted with status effects while under damage immunity.
