The current Luke is of him before he became Jedi, Jedi Luke and his newer (episode VIII) version (Jedi Master Luke¿maybe) will come in due time.... Just not sure when...
I have thought about an idea similar to this for a while.
A Luke (solo) event where you have to take Luke - max him up and pit him in a teired against Yoda on Dagobah - the eventual end result would be a 7* Luke as seen in TESB (as already seen in the game).
The Next "Luke event" will require the Bespin Luke to be maxed and participate him in a tiered event against Vader in the Carbon Chamber. The end result there would be a 7* Jedi Luke (as seen in ROTJ)
Therefore there would be approximately 3 versions of Luke in the game (unless a Force Awakens Luke becomes available down the road).
The idea behind these events means you will need to farm shards, gear and train each version of Luke to "progress" his training towards becoming a Jedi Knight via fun and immersive events.
