My favorite is when Ugnaught took on the Separatist army in the prequels.

No, no, no. You missed it. Hondo and his ugnaught buddies, Terba and Melch stole a Separatist droid command ship and turned multiple divisions of droids against the others so they could steal the treasure. GK and Anakin were fooled by how loyal to the Republic the pirate acted, but Ashoka was all insert snappy teenager wit emoji.

I liked when Darth Nihilus and Darth Sion fought the Sith Triumvirate of Darth Nihilus, Darth Sion, and Darth Traya in that Sith temple.
