Light Side
Rey - bad **** on movie and game
Elder - turn meter, heal, res and debuff removal
Yoda - do I need to explain, it's Yoda
Leia - triple attack while invised
Ackbar - it's not a trap, see elder without res

Dark Side
RG - coolest looking character from the original
Dooku - great stun plus counter
Asajj - Fun character to play, best villain in CW
Phasma - great leader ability and GoT connection
Grievous - gotta keep the Dooku theme going, great animations

These are not necessarily who I play with or have, but my favorite characters in the game.

Thanks for the post @Dekayingsoul also nice top five as well. I haven't seen any grievous being played yet and I like the elder pick as well
