When should I make the switch?

I currently hit top 20 on my server. (Everyone is lvl 72-73)

I currently run:
7* QGJ (L)
7* Yoda
7* Phasma
7* Sid
7* Lumi

I currently am farming/upgrading
5* GS
5* Anakin
5* Rey

At what point are any of those three good enough to sub in and for who?

Hey, I've been finding success with Rey and Anakin at 6*. GS is good at 5, as long as you have him max gear. Running QGJ (L) yoda Anakin GS Rey

Sounds like your regular team is tough. Why change it? But to answer your question... If guess none of them can ever replace one of your current five... Especially if you put omega shards in then once you hit lvl 80!!

Your line up looks like ultimately what I was aiming for. Do you find your team defending pretty easily? Are there any teams you have difficulty with?
