@EA_Jesse All shame on me but I have no idea what the music is in the Ships menu. Shazam also has no idea. Can you share the title? I like it so much but can't find it, can't listen to it, only in the game.

I was watching star wars marathon over thanksgiving and I think its the song they play in Dex's Diner in Episode 2

Unfortunately no. I re-listened the whole soundtrack of all 7 movies and couldn't find it. My guess is that it's in the Rouge One soundtrack or from the clone wars/rebels.

one thing i've noticed: the music band's actions are synced with the music, especially the drum solo! a small detail but makes this game even better!
