2. How does General Kenobi start taunting after you knock him out?
I assume by knock him out you mean stun him. If you read General Kenobi's kit, his unique ability "Soresu" states: ".... Whenever another ally is critically hit, if GK is alive, they gain critical hit immunity for 1 turn and GK gains taunt for 1 turn."
It doesn't matter if GK is stunned or not, as long as he is alive he will gain taunt when an ally is critically hit.
What can someone who is unconscious possibly do that enrages opponents so much that they stop attacking conscious and dangerous adversaries, and instead go after the crumpled lump of white robes in the corner of the room?
Does the unconscious GK somehow use the Force to lift his hand and give his enemies the bird to taunt them into attacking him?
Is Force Flip some kind of previously unknown Jedi skill?

You're trying to use logic instead of taking the time to understand GKs kit.. By your stretch of the imagination how does this game as a whole even exist? How can Anakin fight against Darth Vader.. How can Han fight against different versions of himself? How can characters from vastly different eras be fighting each other?...

It doesn't matter if GK is stunned or not, as long as he is alive he will gain taunt when an ally is critically hit.
So, basically, the same way Holdo and Royal Guard taunt while stunned--because stunning doesn't prevent it.

That's a trick question. Anakin doesn't fight against Darth Vader. Their kits are both obsolete and never used against each other.
